The addition of chicken feet to your bone broth can make it wonderfully gelatinous?
Chicken feet are rich in collagen, a protein that, when cooked, breaks down into gelatin, giving the broth a rich and silky texture. Gelatin also offers numerous health benefits including supporting joint health, improving skin elasticity, and strengthening hair and nails.

Ingredients:

  • Chicken carcass (I like to use 2)

  • Filtered water (fill pot 1 inch above bones/vegetables)

  • Splash of apple cider vinegar (to extract more nutrients from the bones)

  • 1 tsp good quality Celtic sea salt

  • 1 tsp peppercorns

  • 1-2 carrots, roughly chopped

  • 2 celery stalks, roughly chopped

  • 1 onion, cut into quarters

Optional (nutritional!) additions:

  • 6-8 chicken feet and/or chicken necks

Method:

Roast raw chicken bones, feet and/or necks, this helps to enhance flavour.

Add all ingredients to your pot and add filtered water until it reaches an inch above your ingredients.

Simmer for 3+ hours.

Use it in family meals or simply enjoy a comforting cup of broth on its own! I love adding a squeeze of fresh lemon—delicious!
