Restorative Congee
Congee is a deeply nourishing dish with a long history of use in traditional medicine for its healing properties. This warm, easy-to-digest rice porridge is known for its ability to support digestion, restore energy, and soothe the body.
Rich in easily absorbable nutrients, congee helps to strengthen the spleen and stomach, promoting gut health and improving nutrient absorption. Ingredients:
1 cup of white rice
7-8 cups of a combination of water and broth (broth is great for extra nutrients)
1 inch piece of ginger, grated
1-2 tbsp of ghee (optional but great for increased nourishing benefits! stir in once congee is cooked)
Salt and pepper to taste
Bonus: If you have it combo or wakame flakes to provide many different nutrients, vitamins and minerals
Optional (nutritional!) additions:
Optional toppings: shredded chicken, chopped spring onion, fresh coriander, splash of sesame oil, drizzle of tamari or sesame seeds
Method:
Rinse rice under cold water until the water runs clear.
Add rice, water (or broth) and ginger to a large pot. Bring to a boil over medium-high heat, then reduce the heat to a simmer.
Simmer the congee for 3-4 hours, stirring occasionally to prevent it from sticking to the bottom of the pot. Add more water to reach desired porridge-like consistency.
Once the rice has broken down and the congee is creamy, remove from heat. Stir in ghee and add salt and pepper as desired.
Serve with optional toppings and enjoy the nourishing warmth of this restorative dish!
